You should’ve submitted this to the Bittman pub. This is a great Food post. They would’ve accepted I think. I love the idea of show casing native ingredients inside the Japanese kaiseki. After all, it’s really just little bites showcasing as much of the ingredient’s natural flavor as possible. So, any ingredients can go into such a dinner. In fact, “kaiseki”-ing in different parts of the world or different parts of America would be a wonderful way to travel.
